Add pipeline tag and clean up metadata

This PR adds the pipeline_tag (image-classification) to the metadata and removes the arxiv:2609.33437 tag from the YAML section, since arXiv IDs should only appear in the markdown content. No library_name is added because the model is intended to be used with the custom SMAT code.
